Color-changing ‘magic’ vermicelli: Strange delicious weekend dishes

1. Raw materials: for 3-4 servings

– Vermicelli: 200-250 grams

– Dried butterfly pea flowers: 1/3 cup (if there are fresh pea flowers, the better the color will be).

Shrimp: 250 grams

Squid: 250 grams

– Ground pork: 150 grams (if not available).

– Spices to boil shrimp, squid: 2 teaspoons of salt, 2 small pieces of ginger, 2 lemongrass branches

– Meat marinating spices: 1 teaspoon salt, 1/2 teaspoon seasoning bean.

* Sauce part:

1/2 cup of water

– 2 tablespoons fish sauce

– 2.5 tablespoons of lemon juice (pea flower is sensitive to changes in acidity, when it comes to lemon juice, it will change color)

– 2 tablespoons of sugar

– Minced garlic

– Sliced ​​chili (if it is spicy)

* Other ingredients mixed with vermicelli:

– 1 cucumber, chopped or shredded

– 1 shredded carrot

– 1/2 cup roasted peanuts, pounded

– Scallion, fried garlic

– Cilantro, cucumber, bean sprouts (or vegetables of your choice)

– Sesame oil (not available)

2. How to do it

– How to boil the vermicelli on cobalt green: Wash the vermicelli, cut it to taste, put in the perfume of the pea and boiled until the green is even and the vermicelli ripens for 1-2 minutes, not too long. vermicelli is friable. Take out the vermicelli and put it in a bowl of boiling water to cool with a little more ice to keep the green color beautiful, the vermicelli is more delicious.

– Shrimp, squid, preliminarily processed and then boiled with a little salt, ginger, lemongrass to fragrant. Then take out to cool.

– Minced meat, seasoned with pepper, salt, and seasoning seeds. Then, fry the onion, add the minced meat and stir-fry.

– How to make sauce: Mix a mixture of water, fish sauce, lemon, garlic, chili and stir. If you like rich sauce, you can add cherry tomatoes, pineapple and crush, stir the mixture.

– Mix vermicelli: Take the vermicelli and drain it into the bowl, add shrimp, squid, pork, onion, carrot, cucumber, coriander, scallion, and garlic, mix well. Then, sprinkle sweet and sour sauce on the vermicelli and mix well. Green vermicelli when a mixture of high acidic sauce from lemons will gradually change color from green to purple / or pink depending on the amount of lemon added.
