Because: At the moment there is still a shortage of employees, and the delivery infrastructure also has to get going again first. But “Auerbachs Keller” boss René Stoffregen (49) has an even bigger problem: “We just don’t have the tourists who arrive by bus. Large groups make up the majority of our income. “
In addition, summer is the worst season anyway. “When the weather is nice, most people prefer to sit outside.”
The new start is not yet financially worthwhile either. If “Auerbachs Keller” were to open now, one would have to reckon with a monthly minus of 30,000 to 40,000 euros due to personnel costs alone.
That’s why Stoffregen came up with something: In the much smaller “Mephisto Bar” (60 seats), the classics of the large cellar restaurant (650 seats in total) are now offered on a slimmed-down menu.
“Auerbachs Keller” should open completely from June 22nd at the earliest – when hopefully there will be many tourists in Leipzig again.
